Raw Vegan Fruit cereal with homemade hazelnut milk

This raw “cereal” takes me back to my childhood, eating bananas with milk before going to bed. Ahh, those times.. 

You would think that when going vegan, you would have to give up a treat like this, as we do not want to consume another animal’s milk.

But when you slightly adjust the recipe, you can have your cereal with milk, and eat it too.

This recipe requires minimal effort, and it’s so damn delicious.

The milk I used in this recipe is made with hazelnut butter, but I also give you an option made with bananas.

Both options gives a thick consistency and sweet taste.

If you choose to make the milk from bananas, the recipe will be very low in fat, and is a suitable meal for a high carb, low fat raw vegan.

Ingredients

  • Cereal:
  • 4 bananas, sliced
  • a handful straberries, sliced
  • a handful blueberries
  • ------------------
  • Hazelnut milk:
  • 2 tbsp raw hazelnut butter
  • 1/4 tsp vanilla
  • 1 pitted date
  • 1,5 cup water
  • ------------------
  • Banana milk:
  • 2 bananas
  • 1/4 tsp vanilla powder
  • 1 pitted date (optional)
  • 1,5 cup water

Instructions

  1. Add the fruit to a bowl and set aside.
  2. Blend all ingredients for one of the two "milk" options in a high speed blender until smooth.
  3. Pour on top of the fruit and dig in.

Notes

We have determined the nutritional value of oil for frying based on a retention value of 10% after cooking. The exact amount may vary depending on cook time and temperature, ingredient density, and the specific type of oil used.
